Cauliflower Carbonara

There’s a cauliflower craze and today we are making a tasty pasta sauce from it. With it’s ability to take low carb to new levels and its super compatible taste we love this vegetable. Try this healthy alternative if you are an alfredo sauce lover!

-1 box Andean Dream Organic Quinoa Spaghetti

-1 head of cauliflower

-1/4 cup whole milk or dairy free alternative

-1/4 cup chicken or vegetarian broth (or water)

-1 cup diced ham

-Spinach (about 2 large handfuls)

-Grated parmesan (optional)


-Cook spaghetti according to the package instructions.

-Meanwhile, cook the cauliflower in broth (or water), until tender.

-Remove cauliflower from the broth (reserve 1/4 cup of broth) and puree in a bowl until no chunks are left.

-Add the pureed cauliflower and 1/4 cup milk to the pan with the 1/4 cup broth. Bring to a boil and then back down to simmer.

-Cook handfuls of spinach in a pan with a few tablespoons of water until spinach is tender and wilted, 5-7 minutes.

-Add the spinach and the ham to the cooked pasta and pour sauce over top. Mix thoroughly and serve.

Sprinkle with parmesan cheese if desired!
