Banana Flour Oatmeal Cookies

When you have banana flour that you want to experiment with and you’re craving oatmeal cookies, what do you do? You make oatmeal cookies out of banana flour! The second part of the battle was deciding whether to make the cookies with white or dark chocolate chips and either raisins or dried cherries. We couldn’t decide…so…we made both!

Here’s how it goes down. (And no one ever said they were healthy.)

– 3/4 cup Let’s Do Organic Banana Flour

– 1 cup baking flour (we used Blends by Orly London Blend

-1 tsp salt

-1 tsp baking powder

-1 cup butter

-1 cup sugar

-1 cup firmly packed brown sugar

-2 eggs

-2 tsp vanilla

-3 cups oatmeal

-1 cup raisins

-1 cup dried cherries

-1 cup semi sweet chocolate chips

-1 cup white chocolate chips

-Preheat oven to 350 degrees. Line baking sheet with silicone liner or non stick spray.

-Whisk together dry ingredients, set aside.

-Mix all wet ingredients on high until fluffy.

-Stir in flour, mix thoroughly.

-Add oats. Break mixture into 2 parts.

-Add semi sweet chocolate chips and raisins to one half of the batter and mix together.

-Add white chocolate chips and dried cherries to the other half of the batter and mix together.

-Scoop about 1 tbsp of the dough onto the prepared cookie sheet. Bake 12 cookies at a time until all dough has been used. Cook for about 12-14 minutes.
