Everyone loves a good taco…and if you don’t you must be from another planet! One of the best things about tacos is they can be made using so many different ingredients. Our Foodie box theme this month was “Island Getaway” and inside there was an array of products and ingredients with tropical flare and flavor.
We decided to make a pulled chicken taco with the Two Snooty Chefs Jump ‘Em Jerk Seasoning that we included along with the Alter Eco Rice in the form of the famous Jamaican Rice and “Red Peas”.
The Two Snooty Chefs Jump ‘Em Jerk Seasoning is a special spice blend combined with kosher salt, onion, garlic peppers and honey granules. The flavor combination is just right!
Now the reason we called the side dish Rice and “Red Peas”, even though they are clearly kidney beans is because in Jamaica (and other parts of the world) beans are called peas. Interesting, eh mon? We kept this side dish clean as to not compete with the flavors of the pulled chicken dish.
It’s super easy to make this dish and you should have most ingredients at hand.
WHAT YOU WILL NEED:
- 5-6 boneless chicken breasts
- 2 tablespoons Two Snooty Chefs Jump ‘Em Jerk Seasoning
- 1 cup orange juice (we used freshly squeezed)
- 1 yellow onion chopped roughly
- 1 bunch green onions, chopped roughly
- 1/2 cup vinegar based BBQ sauce (we used the Shade Tree Gunshot Sauce from a previous box)
- Juice from 1/2 of a lime
- 1/3 cup gluten free soy sauce
- 1/3 cup olive oil
- 1/3 cup honey
- Corn tortillas
- Sliced jalapenos
- Fresh cilantro
- 1 cup Alter Eco Rice
- 1/2 cup red kidney beans
HOW TO MAKE:
-To make rice and peas: cook rice per instructions on the bag, when finished stir in kidney beans.
-To make pulled chicken: combine all ingredients in a crockpot and cook on low for 6-8 hours.
-Pull chicken apart and spread a small amount on the corn tortilla. Top with sliced jalapenos and cilantro. Squeeze extra lime on top if desired.
-Serve with rice and “red peas”
