Thanksgiving is always a day that is wonderful because you get to spend it with family but let’s face it, we really spend it in the kitchen cooking the delicious feast! And the next day we are so full we can’t move and end up staring at about 5 lbs of leftover Turkey. Here’s our suggestion for a super easy, super tasty meal that gets you out of the kitchen and spending more time finding savings with your Black Friday shopping!
•Leftover turkey, about 2 cups chopped
• 4 cups frozen corn
•1/2 stick butter
•4-5 slices of bacon
•chopped medium onion
•3 chopped celery stalks
•3 medium chopped and peeled carrots
•chopped medium red pepper
•2 medium potatoes chopped
•2 cups cream or half and half
•3 cups chicken broth, low sodium preferred
•2 bay leaves
•Sauté bacon until crispy in a large pot. Remove from pot and set aside.
•Add butter to the pot and sauté onions, celery, carrots and peppers until tender
•Add corn, broth and bay leaves to the pot, bring to a boil
•Add cooked bacon and potatoes and simmer for 20 minutes or until potatoes are cooked
•Add turkey along with cream or half and half and simmer another 5 minutes on low
•Add salt and pepper to taste!
